What’s for dinner tonight? I hate that question. It is always so overwhelming for me to come up with what we can have for dinner. My family is really good about eating whatever I make, but I like making healthy meals that don’t take a lot of time. My favorite recipes are chicken recipes and crockpot recipes. These kind of recipes keep me and my kids happy. I love crockpot recipes because they are usually quick and easy and kids love chicken recipes, because they are really picky about what meat they will eat, but they will always eat chicken. 4 -5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese

1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2 Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3 Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4 Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5 All done and enjoy!

I like the variety that I can find online these days. I can’t believe how many crockpot recipes are available online. I can always count on the internet to help me find great crockpot recipes and chicken recipes that have already been tried and tested. Don’t you just love the reviews and rating systems that give you feedback from those who have also tried the recipe? It is my favorite part of finding recipes online. Simple Oven Fried Chicken Recipes

Oven fried chicken recipes are very easy to make. I got even lazier and used some shake and bake that I found in the pantry, instead of the crackers. This was fast, easy, and best of all, it tasted great. Also, it’s suitable for busy moms.

Oven Fried Chicken Recipe no. 1: 

Ingredients:

4 Boneless, skinless chicken breasts

1 stick margarine

1 sleeve saltine crackers – crushed

Instructions:

  1. Preheat oven to 375. Melt margarine on 11×14 baking sheet in oven while preheating.
  2. When margarine is melted remove sheet from oven and coat each chicken breast in margarine, then in crushed saltines.
  3. Place back on baking sheet and bake for 40 minutes turning halfway through.

Ingredients:

2 large eggs, beaten lightly

1 tablespoon Dijon mustard

1 teaspoon dried thyme

3/4 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 package (5 1/4 ounces) plain Melba toast, pulsed to sand and pebble texture

4 drumsticks and 4 thighs, skin removed

Spray bottle filled with vegetable oil or vegetable oil cooking spray

 

Instructions:

  1. Adjust rack to upper-middle position and heat oven to 400 degrees F.
  2. Mix eggs, mustard, thyme, salt, and pepper in a shallow dish. Put Melba toast crumbs in another shallow dish. Set a large wire rack over an 18 by 12-inch foil-lined jellyroll pan.
  3. Using 1 hand for dry ingredients and the other for wet, lay chicken pieces, 4 at a time, in egg mixture, roll to coat. Then lay 1 piece at a time in Melba crumbs. Press a mix of crumbs into top of chicken.
  4. Turn piece over and repeat, pressing crumbs into other side. Gently shake off excess. Set chicken on rack.
  5. Spray top portion of chicken pieces evenly with oil.
  6. Bake until chicken is nutty brown and juices run clear, 30 minutes for drumsticks and 35 minutes for thighs.

Take a bowl and mix together the corn syrup with sugar, salt, melted butter and vanilla. Add eggs to the above mix and stir the mix well. Take the dough out of the refrigerator and roll flat bread out of the dough with a rolling pin. Place the rolled crust into your pie pan. You can use a baking tray if you do not have a pie tray.

After sticking the edges out well, pour the filling mix into the cup of the crust and drop all the roasted nuts. Bake this pie mix for 30 minutes at 350 degree F in a preheated oven. Cover the sides of the crust with a aluminum foil paper, so that the crust does not get over baked and burnt, and leave the filling to bake further for another 45 minutes. Stick in a knife to check if the filling is baked to perfection. Pecan pie feels special since it has a chewy nutty character. Ultra Easy Chili Recipe

This ultra easy beef chili recipe is so scrumptious that even the pickiest of souls is sure to love it! And for the health freaks out there, this chili recipe even comes with extra vegetables. The Ingredients:

o Five good sized carrots, diced into cubes or smaller chili-beef
o Four cloves of minced garlic
o Three finely chopped onions
o One can of tomato paste, small
o One can of diced tomatoes, large
o One kilogram or two pounds of ground beef, preferably lean. As mentioned above, you can also substitute chicken or turkey.
o Four stalks of chopped celery
o Half a cup of beef broth. However, if you’re using a substitute for your meat, remember to compensate accordingly.
o A quarter cup of mild paprika

o A third of a cup of chili powder

Preparation:

1.  Place the onions and ground beef into a pan with a little oil – not too much, though, because the beef contains its own fat. However, you can add more if you’re substituting beef with something else. Lightly pre-cook the beef over a medium flame and strain away any of the excess fat and oil.

2.  Add in your vegetables, namely the garlic, celery, tomatoes and carrots and then slowly start to mix in your beef broth. Cook over the medium flame for five to ten minutes while keeping an eye on your vegetables. Once they are soft, add your remaining ingredients (but leave the kidney beans for now).

3.  Cook over a low flame for about an hour. If you have access to a slow cooker, this is the perfect chili recipe to follow and cook in it for a couple of hours. The ingredients put in will come out so tender, they will melt in your mouth!

4. Finally, mix in your kidney beans around ten minutes before you serve this dish over pasta, with rice, on its own, or even some lightly toasted French bread.

This is the perfect chili recipe for those cold winter nights, for family dinners and gatherings, and even works as leftovers for lunch the next day. You could also get your kids involved and make it a family event, if you’d like.

Ingredients:

500g of chicken breast download (3)
200g of liver
200g of kidney
3 medium size Peppers
2 cups of broccoli florets
3 cups of chicken broth
1 Teaspoon/1 tablespoon of fresh sage leaves
3 pieces of carrots
Salt to taste
1 medium size onions
5 cups of rice
1 teaspoon olive oil
Groundnut oil
2 cubes of knorr chicken
1 medium size cucumber

Method

Remove the skin as well as the bone of the chicken breast and cut it into cubes, rinse it and pour into a sieve for the water to drain. Cut the liver as well as the kidney into cubes, rinse and pour also into a sieve for the water to drain.

Deep-fry the chicken, liver and kidney in oil in a large saucepan until it becomes golden brown. Chop the onion and add it to the chicken, liver and kidney and cook until it becomes tender. Cut the carrots into thin slices and set aside. Chop the peppers too .Chop the broccoli florets as well as the sage leaves and set aside as well. Stir in the broth, olive oil, rice, and the chopped pepper and carrots. Heat to boiling; reduce the heat and simmer and add the two cubes of knorr chicken, cover the rice and cook the rice until it becomes tender. The rice should be ready in about 30 minutes. Then stir in the broccoli and the sage, simmer until the broccoli becomes tender, which should not be more than 3 minutes.

Add salt to taste. Slice the cucumber and cut it into halves. After serving the rice, put some cucumber by the side of the rice.This recipe serves five people.
